A few familiar flavors combine in this crowd-pleasing casserole!
Ingredients:
1 lb ground beef
2 boxes of cornbread mix
+ 2 eggs
+ 2/3 cup of milk
1 can whole-kernel corn
1 can cream-style corn
1-2 cans chopped green chilis
2 cups shredded mixed cheese
1 packet taco seasoning
Begin by pre-heating the oven to 350 degrees and prepare a 9×13 baking dish with cooking spray.
First, brown the meat on the stovetop, drain, and add taco seasoning.
In a large bowl, prepare the cornbread mix as directed on the package. Add to this mixture 1/2 of the cream-style corn and 1/2 of the whole-kernel corn. You are now ready to layer the casserole!
Begin by adding 1/2 of the cornbread mixture to the bottom of the dish. Then, add the meat.
Next, mix together the remaining cream-style and whole-kernel corn. Spread this over the top of the meat, along with 1 cup of the mixed-cheese.
Next, add the green chilis! Then, add the remaining batter, topped with 1 more cup of mixed-cheese.
You are now ready to pop this casserole in the over – bake at 350 for 40-50 minutes, until cornbread has set.
